Jicama Salad
      serves 4
      
        Ingredients
        
            - 1 med Jicama root, peeled and sliced into matchsticks
- 1 t	salt
- 2 t	sugar
- 2 ea limes, juiced
- 2 ea Romaine hearts, chopped
- 2 T	Cilantro, chopped
- 1/2 t Cumin
- 3 T	olive oil
 
      
        Instructions
        
            - Place the jicama in a bowl, sprinkle with salt and sugar, add the juice of 1 lime, mix and let stand 15 minutes.
- Whisk together the oil, and juice of 1 lime, then mix in the cilantro and cumin. Season to taste.
- Toss the jicama with the dressing, arrange the Romaine on a serving plate, garnish with the jicama, and serve chilled.
